Rinse the chives, shake dry, cut into thin rings and place in a bowl.
Mix together the quark and sour cream until smooth and add chives.
Squeeze juice from half a lemon. Season quark mixture with 1-2 teaspoons lemon juice, salt and pepper.
Peel carrots and grate finely with a box grater. Stir into the quark mixture, season with more salt and pepper and serve.
