11 ozs carrots (coarsely grated)
4 Tbsps Cider vinegar
4 Tbsps extra virgin olive oil
½ tsp ground Cumin
salt
freshly ground peppers
1 pomegranate (seeds only)
½ cup chopped Brazil nut

Preparation steps

1.
Mix together the cabbage and carrots.
2.
Whisk together the vinegar, oil, cumin, salt and pepper and toss with the cabbage and carrots. Leave to stand for 30 minutes.
3.
Place on serving plates and sprinkle over the pomegranate seeds and nuts.
