- 125 grams Couscous
- 2 onions (about 100 grams)
- 6 stalks mint
- 1 small Apple (about 150 grams)
- 2 Tbsps olive oil
- 75 milliliters Vegetable broth
- peppers
- 6 shrimp (without head and shell, each approx 30 grams)

Preparation steps

Bring 180 ml (approximately 3/4 cup) water with a pinch of salt to a boil. Stir in couscous, cover, remove from heat and allow to sit for 10 minutes.

Meanwhile peel onions, halve and thinly slice.

Rinse mint, shake dry, pluck off leaves and chop coarsely.

Rinse apples, cut into quarters, remove seeds and cut flesh into small pieces.

Heat 1 tablespoon oil in a pan and sauté onions for 2 minutes. Add apple pieces and cook briefly to soften.

Fluff couscous with a fork. Mix couscous, mint, and broth into onion-apple mixture. Season with salt and pepper.

Rinse shrimp in a sieve and thoroughly pat dry with paper towels.

In a grill pan, heat remaining oil and fry shrimp on each side for 2 minutes. Season with salt and pepper and serve with apple and onion couscous.
