4 fish fillets (125 g)

3 stalks scallions (only using the green parts)
1 Apple (Golden Delicious)
1 small red onion
4 Maraschino cherry
3 Tbsps vegetable oil
600 grams starchy potatoes
125 milliliters milk
50 grams butter
Nutmeg

Preparation steps

Peel the potatoes, cut into pieces and cook in salted water until soft. Rinse the scallions and cut into 1-2 cm (approximately 1/2-1 inch) pieces. Peel and chop the onion. Rinse the apple and cut into quarters, removing the core. Cut the apples into cubes. Sauté the chopped onions in 1-2 tablespoons of oil until translucent, add the scallions and apples and continue cooking until the onions are tender. Season with salt and pepper. Cut the cherries in half and mix with the apple mixture.

Heat the milk with butter, add the potatoes and mash directly in the hot milk. Season with salt and nutmeg. Season the fish fillets with salt and pepper. Heat 2 tablespoons of oil, add the fish and cook on both sides until done. Sprinkle with the herbes de Provence and lemon juice. Serve the fish on the mashed potatoes with the apple-onion salad and garnish with rosemary.
