½ small Watermelon
1 red Bell pepper
1 small chili pepper
2 scallions
½ bunch fresh mint
2 Tbsps lemon juice
7 ozs Tomato juice

Preparation steps

1.

Wash, clean and halve the strawberries. Remove the seeds from the melon and cut the flesh into pieces. Wash, halve, seed and cut the peppers into pieces. Wash chili pepper and cut into pieces. Clean spring onions and cut into pieces. Wash mint, pluck off leaves and chop coarsely.

2.

Place the prepared ingredients with lemon juice and tomato juice in a blender and puree until a soup-like consistency is obtained. Add some water if necessary.

3.

Season strawberry gazpacho with salt and pepper and add more lemon juice to taste. Pour the strawberry gazpacho over 4 bowls or glasses and serve.
