10 ozs Rhubarb (2 stalks)
1 ½ Tbsps olive oil
2 tsps Maple syrup
3 ozs Baby spinach
1 tsp apple cider vinegar
salt

2 ozs Feta

Preparation steps

1.

Roast the cashew nuts in a pan at low to medium heat until they are lightly browned and fragrant. Remove and put aside.

Wash and clean the rhubarb, dab dry and cut into 1/2-1" wide pieces. Heat 1/2 tbsp. olive oil in a frying pan and fry the rhubarb pieces for 2-3 minutes at medium heat. Add 1 tsp maple syrup and caramelize for a further 2-3 minutes. Take out and put aside.

Wash the spinach and spin dry. Mix remaining oil and maple syrup with apple vinegar and season with salt and pepper. Add spinach to the dressing and mix.

4.

Put the spinach salad on 2 plates. Spread caramelized rhubarb and creamy seeds on top. Crumble feta over the salad and serve.
