4 ozs Soba Noodles (Japanese buckwheat noodles)
Sea salt
1 tsp sesame oil (+ more for the steamer)
2 scallions
2 ozs Sprout
1 Tbsp soy sauce
peppers
2 Tbsps unhulled Sesame seeds
2 Chicken breasts (about 160 grams)

1 Pot, 1 Small skillet, 1 Bowl, 1 Small bowl, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Teaspoon, 1 Peeler, 1 Sieve, 1 Mortar, 1 Brush, 1 Lid, 1 Citrus juicer, 1 Steamer basket

Preparation steps

Rinse and dry orange. Using a peeler, remove the zest of the orange, being careful not to remove any of the pith.

Cut zest into thin strips.

Cut orange in half and squeeze the juice, reserving the liquid in a small bowl.

Cook soba noodles according to package directions in salted water. Add orange zest 30 seconds before the end of cooking. Drain and rinse under cold water.

Mix soba noodles and orange peel with the sesame oil.

Rinse scallions, trim and cut into thin, diagonal slices.

Rinse the sprout mix under cold water and drain well.

Toss scallions and sprout mix with the noodles. Season with soy sauce, pepper and orange juice to taste. Let stand for 30 minutes.

Meanwhile, toast sesame seeds in a dry skillet and let cool. Using a mortar, crush sesame seeds with a little salt.

Rinse chicken breast, pat dry and place in a lightly oiled steamer basket. Steam over medium heat until juices run clear, about 15 minutes.

Remove chicken from steamer and cut into slices. Place the soba noodles on plates, top with the chicken and sprinkle with sesame salt.
