- ¾ cup shelled Peanuts (skins removed)
- ¾ cup seasoned breadcrumbs
- 2 large eggs
- 1 Tbsp milk
- ½ cup all-purpose flour
- 4 boneless, skinless Chicken breasts (halves)
- coarse salt (to taste)
- freshly ground Black pepper (to taste)

Preparation steps

Preheat oven to 425º F. Line a baking sheet with aluminum foil, lightly coated with nonstick cooking spray.

In the bowl of a food processor, combine peanuts and breadcrumbs. Transfer breadcrumb mixture to a shallow pie plate.

In a shallow bowl, beat eggs and milk together. Pour flour into a separate shallow dish.

Rinse chicken under cold running water and pat completely dry with paper towels. Season lightly on both sides with salt and pepper. Dust the chicken on both sides with flour. Dip the chicken breasts into the egg mixture, one at a time and dredge in the breadcrumb mixture, gently pressing the crumbs onto the chicken, if necessary.

Bake in preheated oven until lightly browned and cooked through, about 20 to 25 minutes. Juices should run clear. Serve with your favorite vegetable and wild rice.
