- For the chicken
- 4 Chicken breasts (ready to cook, skinless, about 160 grams or 5 1/2 ounces)
- salt
- cayenne pepper
- 1 organic lemon (thinly sliced)
- 300 grams Snow peas
- 500 milliliters Vegetable broth
- For the herb sauce
- 1 bunch Arugula
- 2 Tbsps chopped parsley
- 2 Tbsps chopped Dill
- 1 tsp medium hot Mustard
- 1 peeled garlic clove
- 1 Tbsp Caper
- 40 grams crustless Toast
- 1 tsp lemon juice

Preparation steps

Rinse chicken breasts, pat dry and season with salt and cayenne pepper. Put chicken breasts in a steam basket. Place lemon slices on top. Rinse snow peas, place in boiling broth, place steam basket over and cook covered for 5-6 minutes.

For the herb sauce, combine all ingredients and puree in a blender. Remove chicken breasts, cut in half lengthwise and serve with drained peas and herb sauce.
