Nutritional values
Hardly any calories, little fat, but lots of protein - what more could you want! Thanks to the limes, the roasted chicken breast also scores with an extra portion of defensive vitamin C.
Serve a salad with the chicken breast - it brings additional vitamins and above all fibre.

Preparation steps
Rinse chicken breasts and pat dry with paper towels. Season with salt and pepper.
Heat oil in a non-stick pan. Fry chicken breast fillets over medium heat for 5 minutes on each side.
Rinse lime in hot water, wipe dry and finely grate peel of 1 lime. Cut both limes in half and squeeze juice.
Soak gelatin in cold water according to package instructions. Transfer chicken to a plate and let cool.
Pour lime juice and broth through a very fine sieve into the hot pan and bring to a boil while stirring.
Add the broth mixture to the gelatin gradually while stirring. Mix the soy sauce and the lime zest with the gelatin. Season the gelatin to taste with honey and mix well.
Place chicken breasts in a storage container with a tight-fitting lid (about 1.5 liters/approximately 1 1/2 quarts). Pour the gelatin mixture over the chicken. Place container in the refrigerator and refrigerate until gelatin mixture has solidified, 3 hours (or longer). Cut the chicken breasts into slices and serve with the jelly.
