1 Cutting board, 1 Small knife, 1 Garlic press, 1 Measuring cups, 1 Pot (with lid), 1 Wooden spoon, 1 Skillet, 1 Whisk, 1 Tablespoon, 1 Small bowl

Preparation steps

Peel onion and garlic. Dice onion and press garlic through a garlic press.

Bring broth to a boil in a pot and add onion, garlic and frozen spinach. Return to a boil, cover and simmer over low heat until spinach is thawed, about 15 minutes.

Meanwhile, toast shredded coconut in a dry pan until golden brown, tossing often. Allow to cool.

Mix yogurt with salt and pepper (to taste) and the curry powder in a small bowl, stirring until smooth.
