- 2 redfish fillet each about 160 grams (approximately 5 ounces each)
- salt
- 150 grams Chinese Egg noodle
- 1 carrot
- 2 scallions
- ½ Cucumber
- 1 Red chili pepper
- 50 grams soybean sprout
- 2 tsps Sesame seeds
- vegetable oil
- 1 Tbsp Fish sauce
- 1 ½ Tbsps sugar
- 1 Tbsp Lime juice
- light soy sauce
- Coriander
Preparation steps

Cook pasta in boiling salted water according to package information. Drain, rinse and drain.

Peel carrot and cut into thin strips.
3.
Rinse scallions and cut into thin rings.
4.
Rinse chile pepper, remove the seeds as desired and cut into rings.

Rinse sprouts and drain.
6.
Rinse cucumber and cut into slices.

Season fish fillets with salt. Cook in hot oil in a skillet over medium heat for about 3 minutes.

Heat some oil in a wok. Add prepared vegetables (except the scallions) and stir over high heat 2 to 3 minutes. Add the fish sauce, sugar, lime juice and soy sauce and stir. Add the noodles, scallions and sprouts and stir until heated through.

Serve fish fillets over noodles and vegetables. Serve sprinkled with sesame seeds and cilantro leaves.
