4 Tuna steak
2 Tbsps soy sauce
1 Tbsp Lime juice
For the dressing
3 Tbsps sesame oil
1 Tbsp Fish sauce
3 Tbsps soy sauce
1 pinch sugar
2 Limes (juice)
salt
peppers
For the noodles
5 ozs Glass noodles
1 red Bell pepper (seeeds removed and finely diced)
1 bunch scallions (sliced)
2 Tbsps torn cilantro
1 Tbsp Oil
To garnish
1 Lime (grated zest)
2 Limes (halved)

Preparation steps

1.
Marinate the tuna in the soy sauce and lime juice for 30 minutes.

For the dressing: whisk together all the ingredients.
3.
For the noodles: put the glass noodles into a bowl, pour boiling water over and stand for 5 minutes. Drain and rinse in cold water. Drain well.
4.
Toss the noodles, vegetables and coriander in the dressing.
5.
Heat the oil in a griddle pan or frying pan and cook the tuna for 1-3 minutes on both sides, until cooked to your liking.
6.
Divide the noodles between serving plates. Put the tuna on top and garnish with lime zest and lime halves.
