400 grams Egg noodle
1 bunch scallions
1 yellow paprika
1 red paprika
½ bunch green Asparagus
sweet and sour Chili sauce
Light soy sauce
2 tablespoons vegetable oil
cilantro (for garnish)

Preparation steps

Cook the noodles according to the package directions. Drain and set aside.

Rinse the scallions and cut into diagonal slices.

Rinse the bell peppers, cut in half lengthwise, remove seeds and white ribs, and cut into strips.

Remove the woody ends from the asparagus. Cut the asparagus into 4 cm (approximately 1 1/2 inch) pieces. Cook in a pot of boiling salted water for 5 minutes. Drain, rinse with cold water and drain again.

Heat the oil in a skillet. Add the scallions, bell peppers and asparagus, and cook for 2 minutes. Stir in the chili sauce and soy sauce. Add the noodles and toss until thoroughly combined. Divide between plates. Serve garnished with cilantro.
