125 milliliters Vinegar
2 bay leaves
4 black peppercorns
4 uncooked Pork ribs
12 leaves white gelatin
600 grams waxy potatoes (cooked the day before)
4 Tbsps clarified butter

Preparation steps

1.

Peel carrot and onion. Rinse celery and leek. Chop all and add to a saucepan. Pour in 1.5 liters (approximately 6 cups) of water and vinegar and bring to a boil. Add bay leaves and peppercorns. Rinse ribs and place into mixture. Cover and simmer over medium heat for 20 minutes.

Soften gelatin in cold water.

Remove ribs from pan and place flat. Pour liquid from pan through a sieve to collect 1 liter (approximately 4 cups) of liquid. Squeeze gelatin and dissolve in liquid. Pour over ribs, cover and chill for 4 hours.

Peel potatoes and cut into slices. Cook in hot butter for 5-10 minutes or until crisp. Season with salt and pepper and serve with sour ribs.
