4 sprigs thyme
9 ozs goat cheese rolls

Preparation steps

Clean, peel, wash and cut root vegetables into 3/4-inch pieces. Cut beet tubers and pumpkin flesh also into 3/4-inch pieces. Peel and finely dice the garlic. Peel onions and cut them into fine rings. Wash thyme sprigs, shake them dry, and pluck leaves from 2 sprigs. Cut goat cheese into slices.

Put vegetable cubes with garlic and onion rings in a baking dish and season with salt, pepper, 1⁄4 tsp coriander, and thyme leaves. Drizzle everything with oil and honey, mix well and spread goat cheese on top. Top the vegetables with thyme sprigs and bake in a preheated oven at 200 °C / 350 °F for 25-30 minutes.
