Beet not only offers protection against cell damage thanks to the natural pigment betanin. The secondary plant substance of the red tuber also has an anti-inflammatory effect. The easily digestible goat cheese convinces with a mineral mix of calcium and phosphorus; this combination strengthens the bones and keeps the teeth healthy.
If the taste of goat cheese is too intense, you can use mozzarella or shepherd's cheese instead. Halloumi is also a good choice, but it does not melt as much in the oven.

- 22 ozs Root vegetable (e.g. carrots, sweet potatoes)
- 10 ozs beets (pre-cooked, vacuum packed)
- 14 ozs pumpkin flesh
- 2 garlic cloves
- 3 ozs onions
- 4 sprigs thyme
- 9 ozs goat cheese rolls
- salt
- peppers
- ground cilantro
- 4 Tbsps olive oil
- 1 Tbsp honey

Preparation steps
Clean, peel, wash and cut root vegetables into 3/4-inch pieces. Cut beet tubers and pumpkin flesh also into 3/4-inch pieces. Peel and finely dice the garlic. Peel onions and cut them into fine rings. Wash thyme sprigs, shake them dry, and pluck leaves from 2 sprigs. Cut goat cheese into slices.
Put vegetable cubes with garlic and onion rings in a baking dish and season with salt, pepper, 1⁄4 tsp coriander, and thyme leaves. Drizzle everything with oil and honey, mix well and spread goat cheese on top. Top the vegetables with thyme sprigs and bake in a preheated oven at 200 °C / 350 °F for 25-30 minutes.
