10 ozs Rutabaga
4 colorful rainbow carrots

3 Tbsps olive oil
5 Dried dates (pitted)
14 ozs low fat Yogurt (low-fat)
¼ tsp cinnamon
½ bunch parsley

Preparation steps

1.

Wash parsnips, potatoes, beets, and black salsify thoroughly. Peel roots and turnip. Cut all vegetables into bite-sized pieces.

Season vegetables with salt, pepper, paprika powder, cumin and coriander and mix with sesame and oil. Spread on a baking tray lined with baking paper and bake in a preheated oven at 400 °F for about 35 minutes.

In the meantime cut the dates into fine cubes. Mix with yogurt and cinnamon. Wash parsley, shake dry and chop coarsely.

4.

Serve the oven vegetables with yogurt date cinnamon dip and sprinkle with parsley.
