- 4 gilt-head bream (125 g)
- 2 onions
- 1 green Pepperoncini
- 100 milliliters Red wine vinegar
- 3 small, red chili peppers
- 1 small branch rosemary
- salt
- freshly ground pepper
- sugar
- Chervil (for serving)

Preparation steps
1.
Rinse sea bream and place in a bowl.
2.
Peel onions and cut into wedges. Rinse chile peppers, remove seeds and cut into rings. Simmer vinegar with 350 ml (approximately 1 1/2 cups) of water. Add onions, pepperoncini, chile peppers and rosemary.
3.
Season well with salt and pepper and add sugar to taste.
4.
Pour vinegar mixture over fish, cool, cover and refrigerate overnight. Serve with chervil.
