Preparation steps

1.

Peel eggs, remove yolks, pass through a sieve and finely chop egg whites.

2.

Mix egg yolks with mustard in a bowl and slowly add oil while stirring. Add paprika and egg whites and  mix.

3.

Rinse chives, shake dry and cut into rolls. Add chives to the bowl, mix and season with salt and pepper. Serve in a small bowl.
