- 2 egg yolks
- 1 Tbsp Mustard
- 2 Tbsps lemon juice
- salt
- peppers
- 4 Tbsps vegetable oil
- 4 Tbsps Veal stock (from a jar)
- 1 pinch sugar
- ½ tsp Tomato paste
Preparation steps
1.
Mix egg yolks with mustard and lemon juice in a bowl, stir with a whisk and season with salt and pepper.

Gradually add oil to the bowl while stirring. Add veal stock, stir and season with tomato paste and sugar. Store in an airtight container until ready to use.
