400 grams green Asparagus

2 scallions
4 Radish
4 Tbsps olive oil
4 Tbsps white balsamic vinegar
2 Tbsps lemon juice
salt
freshly ground peppers
1 pinch sugar
4 Flatbread
4 thin slices ham (such as San Daniele)

Preparation steps

1.

Rinse asparagus, peel bottom thirds and cut into 6 cm (approximatley 2 1/2 inch) pieces. Blanch in boiling salted water for about 8 minutes or until al dente. Drain and rinse in cold water, drain well.

Rinse and dry scallions, cut into thin rings. Rinse radishes and cut into thin slices. Whisk olive oil with balsamic vinegar and lemon juice. Season with salt, pepper and sugar. Mix scallions with asparagus in a bowl. Bread flatbread into pieces and add to the bowl. Toss with the dressing.

Transfer to plates and serve topped with radishes and ham.
