1 small white onion
4 Tbsps vegetable oil
100 grams Ricotta cheese
50 grams grated Parmesan
1 egg
100 grams Pastry flour
salt

4 White rolls (with poppy seeds)

Preparation steps

Rinse tomato and cut into slices. Peel the red onion and cut into rings. Rinse spinach thoroughly and chop as small as possible. Peel the white onion and finely chop. In a frying pan with 1 tablespoon hot oil, cook onion until translucent, then remove and add with spinach, ricotta, Parmesan, egg and flour in a bowl. Knead everything together and season with salt, pepper and nutmeg. If mixture is too soft add a few breadcrumbs. With wet hands shape into four large patties and fry in remaining hot oil for about 6 minutes per side.

Cut the rolls, cover with the patties, top with tomatoes and onion rings on it, and finish with the top bun. Serve with tomato salsa, as desired.
