- 5 large potatoes (or leftover potatos will do)
- 2 eggs
- ¼ cup Oat Milk
- 1 cup Whole wheat flour
- salt
- freshly ground pepper
- 1 pinch grated Nutmeg
- 3 Tbsps mixed Fresh herbs (e.g. parsley, sage, thyme, dill)
- 1 scallion
- 5 Radish
- 2 Tbsps Hazelnuts
- 1 ½ cups Yogurt (3.5% fat)

Preparation steps
Boil potatoes in a pot until soft. Mash potatoes in a separate bowl. Add eggs, oat milk, flour, salt, pepper and nutmeg and mix well. Chop herbs and fold into the egg mixture. Combine egg mixture with the mashed potato until smooth. Spray hot waffle iron with non stick spray and cook waffles, 6-8 waffles in total.
In the meantime, slice the spring onion and radish. Coarsely chop the hazelnuts. Serve the hearty waffles with some yogurt and sprinkled with spring onions, radishes and hazelnuts.
