2 large carrots (peeled and grated)
3 cups Lettuce
2 Granny Smith Apple (cored and thinly sliced)
½ cup Cheddar cheese (diced)

Preparation steps

Preheat the oven to 220°C (200 fan) | 425°F | gas 7.

Heat the olive oil in a large frying pan set over a moderate heat. Season the chicken then stir-fry for 4-5 minutes, stirring occasionally.

Toast the slices of baguette in the oven at the same time, turning once after a few minutes.

Toss together the grated carrot and lamb's lettuce in a mixing bowl. Divide between serving bowls, then sit the slices of apple to one side.
5.
Arrange the chicken and cheese next to the apple. Garnish with a few sultanas and a toasted piece of baguette before serving.
