Pasta with Salmon and Vegetables in Cream Sauce

- 300 grams Penne
- 300 grams Salmon
- 2 Tbsps lemon juice
- 3 Tbsps water
- ⅛ l Whipped cream
- salt
- freshly ground peppers
- 100 grams Snow peas
- 2 carrots
- 10 Asparagus
- 3 Tbsps sunflower oil
Preparation steps
Rinse snow peas, cut off ends, then cut in half lengthwise and again crosswise. Cook in boiling salted water for 3 minutes, then plunge into ice water and drain.
Peel carrots and cut into thin slices, then cook in boiling salted water for about 6 minutes. Plunge into ice water and drain.
Rinse asparagus, peel the bottom thirds, then trim the ends. Cut diagonally into pieces and cook in boiling salted water about 8 minutes. Plunge into ice water and drain.
Cut the salmon into bite size pieces. Heat oil, then cook snow peas, carrots and asparagus over medium heat, about 2 minutes. Add lemon juice, some water, cream and salmon and simmer until salmon is cooked through, 3 to 4 minutes. Season with salt and pepper. Cook pasta according to the package instructions, drain and add to the sauce. Mix well together and serve.
