Pasta with Salmon and Cream Sauce
The salmon scores points for its abundance of omega-3 fatty acids. These healthy fats keep our heart healthy by protecting the blood vessels and positively influencing the cholesterol level. In addition, the ability to concentrate is improved, as the fatty acids improve the transmission of stimuli in the brain. The fish also provides us with vitamin D, which among other things ensures strong bones.
For more vegetables in the dish, you can cook spinach, leek or peas in the sauce or serve with a salad. How about a colourful tomato salad on a bed of grainy cream cheese as a side dish? You can choose pasta according to your personal preference. The salmon sauce tastes just as delicious with tagliatelle, spaghetti or ribbon noodles. You can also buy the salmon frozen, in which case the fish is cooked a little longer in the sauce or defrosted beforehand.
Cook farfalle in boiling salted water until al dente. Rinse nad pat dry salmon, cut into 1.5 cm (approximately 1/2 inch) cubes. Peel garlic and chop finely. Heat oil in a pan and saute garlic until translucent. Add salmon and saute briefly. Deglaze pan with cream and season with salt and pepper. Simmer for about 10-15 minutes on medium heat.
Rinse chives, shake dry and cut into small rings. Drain pasta and arrange like a nest on plates. Place seasoned with a dash of lemon juice salmon and cream sauce on top and sprinkle with chives. Serve.
