1 large Tomato (washed; trimmed and diced)
1 medium onion (peeled and diced)
1 green Bell pepper (washed; trimmed; seeded and cut into strips)
2 Tbsps extra virgin olive oil (plus extra for serving)
freshly ground Black pepper
8 ozs smoked Salmon (or herring)
fresh Fresh herbs (to garnish)

1 Pot, 1 Slotted spoon, 1 Bowl, 1 Plate, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Peeler, 1 Wooden spoon, 1 Measuring cups

Preparation steps

Slice potatoes very thinly lengthwise. Rinse and pat dry with paper towels. Heat the oil to 375º F. Fry the chips until crisp and golden brown, about 3 minutes. Do not over crowd, work in batches if necessary.

Drain on paper towels; sprinkle with salt and pepper.

Place tomatoes, onions and peppers in a bowl. Season with salt and pepper; drizzle with olive oil and toss to coat.

On individual serving plates, start with a spoonful of the vegetable mixture, followed by a slice of salmon or herring, topped with a crispy chip. Repeat until you have three layers. Top with fresh herbs and drizzle with olive oil. Serve.
