2 Zucchini
4 Tbsps vegetable oil
100 milliliters Chicken broth
300 grams Salmon
1 Tbsp lemon juice
8 Dill
2 Tbsps Sherry vinegar
1 tsp Mustard
½ tsp honey
2 Tomatoes
salt
freshly ground peppers

Preparation steps

Rinse and trim zucchini and cut lengthwise into very thin slices (possibly with vegetable peeler). Briefly sauté in 1 tablespoon oil, add broth and remove from the heat. Remove zucchini strips and drain. Reserve broth.

Rinse salmon fillets, pat dry and cut into 8 slices. Season with a little lemon juice, salt and pepper, and cover each with a sprig of dill. Place in a shallow pan and add a ladleful of broth, cover and cook for 2-3 minutes over low heat. Remove salmon and wrap with slices of zucchini. Transfer to a shallow dish or plate.

Stir broth with vinegar, mustard, honey and remaining oil to make a vinaigrette. Season with salt and pepper.

Blanch tomatoes for a few seconds, peel, quarter, core and dice into small cubes. Pour vinaigrette over the courgette rolls and sprinkle with diced tomatoes. Cover and marinate for1 hour and then serve.
