For the potatoes
4 medium, baking potatoes (pricked with a fork)
1 ½ cups fat-free Cottage cheese
2 small carrots (peeled and grated)
salt
freshly ground Black pepper
For the salad
2 cups Arugula (leaves)
1 Tbsp olive oil
1 Tbsp lemon juice

Preparation steps

For the potatoes: Preheat the oven to 180°C (160° fan) | 350F | gas 4.
2.
Place the potatoes directly on the centre rack in the oven and bake for 1 hour - 1 hour 10 minutes until the skin is crisp and they are soft when squeezed.
3.
Stir together the cottage cheese and the carrot with plenty of seasoning. Split the potatoes open when cool enough to handle and fill with the cottage cheese mixture.
4.
For the salad: Toss the rocket leaves with the olive oil, lemon juice, and a little seasoning. Serve alongside the potatoes.
