4 strips lean Bacon (cooked and chopped)
8 new potatoes
1 tsp salt

Preparation steps

Combine buttermilk, lime juice and chives for dressing, season with salt and pepper, stir well, and set aside.

Place potatoes in cold water in a medium saucepan. Add 1 teaspoon salt. Boil until tender, about 15 minutes. Drain and cool. Cut into 1/4 inch slices.
3.
Divide arugula among 4 plates and arrange with potato and bacon on top. Sprinkle with shaved Parmesan cheese and spoon over dressing.
