1 organic Lime
1 tsp freshly grated ginger
1 tsp brown sugar
1 tsp Garam Masala
2 Tbsps olive oil
800 grams Salmon (with skin)
Sea salt

Preparation steps

Crush the allspice berry with peppercorns coarsely in a mortar. Cut some thin slices from the middle of the lime for garnish, and squeeze out the juice from the rest.

Rinse the red chile pepper, cut in half, trim, cut one half into thin strips and chop another half for garnish.

For the marinade, mix the chile pepper strips with the allspice berry-peppercorn mixture, ginger, brown sugar, garam masala, olive oil and lime juice.

Rinse the salmon fillet and pat dry. Rub the flesh side with the mariande, season with salt and top with the lime slices. Place the fillets on the preheated grill, cover and grill for about 15 minutes (depending on the thickness of salmon fillets).

Rinse the scallions, trim and cut into thin rings. Sprinkle the scallions over the salmon and serve with the chopped chile pepper.
