3 Tbsps Canola oil
6 ozs flat beef rump steaks
20 ozs thin Rice noodles
salt
2 carrots
7 ozs Snow peas
3 Tbsps honey
1 ¾ ozs Vegetable broth
1 Tbsp dark soy sauce
3 Tbsps sweet soy sauce
2 generous pinches Rice starch
1 Tbsp Sesame seeds
1 tsp sesame oil
1 handful pea shoots
1 handful cilantro leaves
1 tsp black Sesame seeds

Preparation steps

Peel ginger and garlic and mash with canola oil to a paste. Pat steaks dry, rub with paste and let sit for 2 hours.

Meanwhile, cook rice noodles according to package directions in plenty of boiling salted water until al dente. Then drain and leave to drain. Clean and peel carrots and cut into fine strips with a vegetable slicer.

Clean sugar snap peas, wash and cut diagonally into strips. Cook both in boiling water for 3 minutes, rinse with cold water and drain.

Bring honey, broth and both soy sauces with starch to a boil over low heat while stirring, then cool. Mix with sesame seeds and sesame oil. Wash the sprouts and coriander, shake dry and pluck off the leaves.

Mix noodles with carrots, snow peas and pea shoots. Fry meat in a hot grill pan for 2-3 minutes on each side, depending on desired doneness; let rest a bit and then cut into strips.

6.

Arrange noodles on plates, drizzle with sesame dressing and arrange meat on top. Garnish with cilantro and black sesame seeds.
