Preparation steps

1.

Rinse the potatoes and cook until tender, about 20 minutes. Allow to cool slightly, peel and cut into very thin slices. Grease an oven-proof  casserole dish with 2-3 tablespoons olive oil. Rinse the tomatoes and cut into slices. Layer the tomatoes and potatoes like roof tiles in a single layer in the baking dish.

Drizzle with 4 tablespoons olive oil. Season with salt and pepper salt. Sprinkle with thyme. Bake in an oven preheated to convection 200°C (approximately 400°F) until the potatoes are golden brown, about 20-25 minutes. Sprinkle with Parmesan and bake another 5 minutes.
