750 grams Snow peas
salt
3 scallions
1 bunch mint (approximately 20 grams)
150 grams streaky Smoked bacon
½ tsp fennel seeds
freshly ground peppers
50 grams slivered almonds
2 Tbsps vegetable oil
1 organic Orange (Juice and zest)
2 Tbsps lemon juice

Preparation steps

1.

Rinse, trim and halve snow peas diagonally. Cut 250 grams (approximately 8 1/2 ounces) of the snow peas into thin strips. Blanch remaining snow peas in salted boiling water, about 2 minutes. Drain and rinse with cold water.

Rinse, trim and cut scallions crosswise into rings. Rinse mint, shake dry and strip leaves from stems.

3.

Dice bacon. In a pan, sauté bacon with fennel seeds, pepper and almonds in hot oil. Remove pan from heat and stir in orange and lemon juices. Mix with raw and cooked snow peas, scallions, and mint. Season salad to taste, arrange in a bowl and serve garnished with orange zest.
