Preparation steps

Shell the peas and blanch in a pot of boiling salted water until tender, about 10 minutes. Rinse the snow peas, remove their strings and blanch in a pot of boiling salted water until crisp-tender. Drain, rinse under cold running water and cut diagonally into wide strips. In a bowl, whisk together the vinegar, honey and mustard.

Whisk in the oil, season with salt and pepper and mix well. Arrange the peas and snow peas on a plate, drizzle with the vinaigrette, mix gently and serve sprinkled with walnuts and shaved pecorino.
