- 5 ozs button Mushroom
- 3 ozs
- 3 ozs shiitake mushrooms
- 2 garlic cloves
- 1 small onion
- 1 ½ Tbsps Canola oil
- 1 tsp Tomato paste
- 1 Tbsp ground paprika (hot)
- ½ cup Vegetable broth
- ½ cup Soy creamer
- 4 ozs Pearl onion (drained)
- ½ bunch Chives
- 2 sprigs Sage
- salt
- peppers

Preparation steps

Trim mushrooms with a brush and cut in halves or quarters depending on size. Peel garlic and small onion and finely chop or dice.

Brown mushrooms in a large, dry, non-stick skillet, turning frequently, 4-5 minutes. Pour in oil, add onions and garlic and fry for another 2 minutes.

Add tomato paste and sauté briefly. Sprinkle in paprika. Add broth and soy creamer.

Add pearl onions to the pan, bring to a boil, cover and cook over medium heat for 4 minutes. Rinse chives and sage and shake dry. Pluck sage leaves.

Cut chives into rolls, chop sage and add both to the sauce. Season mushrooms with salt and pepper and serve hot.
