- 6 ozs Crème fraiche
- 1 Tbsp lemon juice
- 2 Tbsps Whipped cream
- salt
- freshly ground peppers
- olive oil
- 2 Tbsps scallions

Preparation steps
1.
Trim the mushrooms and thinly slice on a mandoline. Arrange the mushrooms slices on plates. Mix the crème fraîche, lemon juice, and heavy cream.

Season the mushrooms with salt and pepper. Drizzle with the olive oil and the crème fraîche sauce. Garnish with the chopped chives, and serve.
