2 onions
2 eggs
2 stale White rolls
½ bunch parsley
salt
freshly ground peppers
clarified butter (for sauteeing)

Preparation steps

Rinse the parsley, shake dry and finely chop. Cut the bread into slices and soak in warm water. Squeeze the bread. Place the ground meat in a bowl.

Peel and halve the onions, dice and sauté in a little oil. Combine the onions with the well squeezed bread, eggs, parsley and meat and season with salt and pepper.

Mix well and knead into a uniform mixture.

With wet hands, shape mixture into small meatballs shapes and place on a damp cutting board.

Slowly saute meatballs, 4 at a time, in hot clarified butter for about 5 minutes until golden brown.
