4 ozs Bacon
1 onion (diced)
1 garlic clove (finely chopped)
2 carrots
10 ozs waxy potatoes
1 Leek
1 Tbsp vegetable oil
2 cloves
1 bay leaf
salt
freshly ground peppers
34 ozs Beef broth
7 ozs Sausage
7 ozs Smoked pork chop (boneless)

Preparation steps

1.

Place lentils in a colander and rinse under cold water. Cover in a bowl with fresh water and let soak overnight. Drain well in a colander.

Peel carrots and potatoes and cut into slices or cubes. Trim leek, rinse and cut into rings. Heat oil in a saucepan and sauté bacon, onion, and garlic until soft. Add carrots, potatoes and leek and sauté. Add cloves and bay leaf. Pour in broth and add lentils, bring to a boil, reduce heat and simmer for about 45 minutes. Remove cloves and bay leaf.

Cut the sausage into slices and smoked pork into cubes and add to the soup. Simmer for 5 minutes and season with salt and pepper. Divide soup among bowls and serve.
