1 Culinary herbs (Thyme, sage, parsley ..)
500 grams green Lentils

4 crude Sausage such as. sausages, pork sausages ....), also mixed
1 Tbsp clarified butter

Preparation steps

Soak the salted meat in cold water for about 2 hours. Drain and replace the water every 20 minutes so the meat is no longer salty. Drain well,and place in a saucepan with fresh water to cover and some pepper  and simmer over low heat until tender, about 2 hours. Peel the carrot and the onion. Cut the carrots into slices. Stud 1 onion with cloves and slice the other onion. Rinse the herbs, spin dry and tie into a bundle.

In a pressure cooker combine the carrots, onions, herb bundle and the lentils, cover with abundant water, and season with a little salt and pepper. Cook 15-20 minutes. Lift the cooked pork from the pot, drain and cut into large pieces. Stir into the lentils along  with 300 ml (approximately 10 1/2 ounces) of broth and simmer uncovered 20 to 30 minutes, stirring occasionally. Add the raw sausages after 15 minutes of cooking. Just before serving lift the meat and the sausages from the pan and saute until golden brown on all sides in a large skillet in hot butter. Cut the sausages into pieces. Remove the studded onion and the herbs from the lentil mixture. Spoon the lentils into a deep plate top with the meat and sausage pieces and serve very hot, garnished with fresh thyme.
