300 grams tan Lentils
2 carrots
1 onion
2 garlic cloves
250 grams Pancetta
250 grams Pork (shoulder)
4 Crackers
1 ½ liters Beef broth
2 bay leaves
1 tsp rosemary
1 tsp thyme
1 tsp dried marjoram
salt
freshly ground peppers
3 Tbsps dark balsamic vinegar
sugar (to taste)
8 Sage (for garnish)

Preparation steps

Soak lentils overnight. Peel carrots, onion and garlic and cut into cubes. Cut the pancetta into strips. Rinse the pork, pat dry, trim excess fat and tendon and cut into 2 cm (approximately 3/4 inch) cubes. Cut the sausages into bite-sized pieces. Fry the pancetta in a large, dry saucepan. Add the pork, vegetables and lentils and sauté briefly.

Pour in broth, add the spices and season with salt and pepper. Simmer for 45-50 minutes over medium heat. Season the stew with vinegar and sugar, add sausage pieces, mix to combine and serve on warmed plates garnished with sage.
