- 1 ½ cups Lentils (soaked in water)
- 2 onions
- 2 red chili peppers
- 1 Tbsp butter
- 0.333 bunch parsley
- 12 ozs Pappardelle noodles
- salt
- 2 Tbsps Oil
- 6 Tbsps white balsamic vinegar
- ¼ cup vegetable stock

Preparation steps
1.
Cook 250 g lentils in boiling water until al dente. Sweat 2 peeled and diced onions and 2 sliced red chillies in butter. Cook 350 g pappardelle in salted water. Drain and refresh in ice-cold water. Drain the lentils. Add 2 tbsp oil, 6 tbsp white balsamic vinegar and 50 ml vegetable stock. Mix all the ingredients and season with salt and pepper. Leave to stand for 30 minutes. Serve sprinkled with chopped parsley.
