- 2 Tbsps olive oil
- 4 cloves garlic cloves (crushed)
- 4 cups mussels (rinsed with beards removed)
- ¾ cup dry white wine
- 1 cilantro
- 2 red chili peppers (seeded and sliced)
- salt

Preparation steps

Heat the oil in a large saucepan set over a moderate heat until hot.

Add the garlic and fry for 30 seconds before adding the mussels. Increase the heat, add the wine, and cover the pan with a lid.

Cook over a slightly reduced heat for 4-5 minutes, shaking the pan occasionally, until the mussels have opened. Discard any that don't open.

Chop half of the coriander and stir into the mussels along with the chilli. Season to taste with salt and pepper.
5.
Ladle into bowls and serve with a garnish of the remaining coriander.
