600 grams cooked potatoes (leftover)
2 scallions
500 grams Cherry tomatoes (Red and yellow)
400 grams shrimp (peeled and deveined)
4 Tbsps Canola oil
1 tsp pink peppercorns
salt
freshly ground peppers

Preparation steps

Peel potatoes and cut in half lengthwise. Trim and rinse scallions and cut into small rings. Rinse and halve the tomatoes. Rinse the shrimp and pat dry with paper towels.

Heat 2 tablespoons oil in a hot large pan (or use two smaller pans). Fry the potatoes with the cut surfaces down for 1-2 minutes until crisp. Add the scallions and brown. Stir in the peppercorns and brown briefly. Then take the potatoes from the pan, add rest of the oil and saute the prawns for 1-2 minutes. Add the tomatoes and saute for about 1 minute. Then add the potatoes again, mix everything together and season well with salt and pepper. Serve sprinkled with basil.
