- 5 Tomatoes
- 250 grams button Mushroom
- 10 garlic cloves
- 2 shallots
- 4 sprigs parsley
- 6 sprigs Basil
- 24 Shrimp tails (unpeeled)
- salt
- peppers
- ½ lemon (juiced)
- 175 milliliters olive oil
- 50 milliliters Brandy
- 50 milliliters dry sherry
- 1 generous pinch Sambal oelek
- 30 grams cold butter (in pieces)
Preparation steps

Blanch the tomatoes for a few seconds, rinse, peel, quarter, core and cut into small cubes. Rinse the mushrooms and cut into thin slices. Peel the shallots and finely dice. Peel the garlic. Rinse the herbs, shake dry, pluck off the leaves and cut into fine strips. Peel the shrimp tails, carefully cut in the back and remove the intestine. Season with salt, pepper and lemon juice.

Heat the olive oil in a pan and saute the shrimp in it on high heat. Add the garlic, shallots and mushrooms Cook for about 2 minutes. Add the diced tomatoes and deglaze with brandy and sherry. Season with salt, pepper and sambal oelek. Remove from heat, add the herbs and stir in the cold butter. Serve immediately.
