2 red Bell pepper
3 shallots
2 Tbsps finely chopped parsley

Preparation steps

Peel potatoes and cut into small cubes. Peel shallots and cut into quarters lengthwise. Rinse bell peppers, cut in half, remove seeds and white ribs and cut into small cubes.

In a large skillet heat 3 tablespoons oil and fry potatoes over medium heat and stir well. After about 3 minutes, add bell peppers and shallots. Continue to fry until potatoes are cooked. In the meantime, cut sausages into 2 cm (approximately 3/4 inch) long pieces and cook for 4-5 minutes before the end of the frying with the potatoes. Season with salt and pepper. Stir in parsley.

In a second pan while in a little oil fry four eggs. Season with salt and pepper. Arrange fried sausages and eggs on the potatoes and serve immediately.
