800 grams cooked potatoes
3 shallots
salt
freshly ground peppers
8 slices Bacon (diced)
3 Tbsps sunflower oil
1 Tbsp butter
4 eggs
2 Tbsps coarsely chopped parsley

Preparation steps

1.

Peel the potatoes and cut into slices. Peel the shallots and finely chop.

Heat the oil in a pan over medium heat and fry the potato slices until golden brown. Add bacon and shallots and fry until bacon is crisp. Season with salt and pepper and spoon into a preheated dish.

3.

Melt the butter in the same pan and fry the eggs. Serve on the potatoes. Sprinkle with salt, pepper and parsley and serve immediately. Serve with a side salad, if desired.
