Preparation steps

1.

Rinse potatoes and steam (with skins) until tender, 20-25 minutes, depending on size of potatoes. Let cool.

2.

Peel cooled potatoes with a paring knife and cut into 5-10 mm thick (approximately 1/4 to 1/2 inch thick) slices.

3.

Peel onion and cut into thin strips. Peel and finely chop garlic. Heat oil in a heavy pan over medium heat.

4.

Place potato slices in pan in a single layer and fry until crispy, turning gently several times, 8-10 minutes.

5.

Add onion and garlic and sauté, turning ingredients occasionally, until onions are soft, about 5 minutes more.

6.

Season potatoes with salt, freshly ground pepper and ground caraway seeds. Serve immediately.
