1 onion
1 Tbsp butter
vegetable oil (for frying)

Preparation steps

Cut peeled, cold potatoes into 3-4 mm (approximately 1/8 inch) thick slices. Peel and finely chop onion. Heat butter and oil in a pan over medium heat. Add potatoes in an even layer and cook, shaking the pan occasionally, until all the potatoes are golden-brown, about 10 minutes. Add onions and cook 2-3 minutes more. Season with salt, pepper, and caraway seeds.

Rinse parsley, shake dry and finely chop leaves. Serve potatoes sprinkled with parsley.
