Preparation steps

1.

Rinse endives, trim, remove outer leaves, divide to individual leaves (set aside some tender inner leaves for garnigh). Cook endive leaves in a pot with broth for about 20 minutes. Remove pot from the heat and puree with an immersion blender. Add Parmesan, stir in cream and season with salt and pepper.

2.

Serve soup in a warm deep plate garnished with reserved endive leaves.
